For When You Need Another Side Dish

Have you ever had the perfect entree, but can’t think of a side dish to go with it? This happens to me all the time. I like to have a wide variety of side dishes with meals, but I tend to stick to broccoli, carrots, rice or potatoes. If this is just like you, here’s a nice salad that isn’t any of the above! It’s the perfect mix between sweet, spicy, and crunchy. It has one ingredient that I would never, ever normall suggest you use – raisins. I have a strong aversion to raisons – dried, rehydrated fruit is just creepy. The raisins are magic in this salad though, so give it a shot. Feel free to add whatever nuts and dried fruit you have and like. Waldorf salads traditionally have raisins and walnuts, but I’ve used pine nuts and dried cranberries and it was just as good!

Waldorf Salad

Yield: 2 servings

Prep Time: 10 minutes


1 apple
2 stalks of celery
Handful raisins
Handful walnuts
2 tbsp low-fat mayonnaise
1/2 tsp honey (or sugar, whatever you have on hand)
Pinch of paprika
Pinch of salt
Dash of hot sauce


1. Make the salad dressing by combining the mayonnaise, honey, paprika, salt and hot sauce to a salad bowl. Stir to mix ingredients. Set aside.

2. Core apple and cut into bite size pieces. Add to the bowl of dressing.

3. Cut the celery into bite size pieces. Add to the bowl of dressing.

4. Add the raisins and walnuts to the bowl and toss all ingredients with the dressing until evenly coated.

5. Enjoy!
